Firstly it just sounds like your missing the Basic Enabled profile. So to me it sounds like the installation is OK.
There is a .sql in profiles/ called something like BasicEnabled which setups the admin and editors groups.
You can run as many tikis as you like on one server. My total is now 43 tiki sites! on one server Ive 29 on another server.
