Menu from Structure starting at all second level

I have a wiki structure set up we'll just use this as an example:
-Root
--Category 1
--Category 2
--Category 3
--Category 4
--Category 5

All of the categories have more children and such as well.

I've got the menu set up vertically using the menu module.
I've turned off Bootstrap and CSS/Superfish. This gives me the menus with the folder image next to them that I want.
However when you load the page all that shows is Root an you have to open it to get the categories.

We used to have a similar menu (should have looked more closely at the params before deleting probably) where it would just start at the Categories. Root wouldn't even be there.

I though that I should be able to set this by changing "Limit low visibles levels" but putting any value in that just makes the who menu disappear.

Anyone know how to get a menu that just shows the Categories not the root of the structure?
