Submenus aren't part of Tiki by default, but you can do some file modifying to get them in Tiki 1.8.5, thanks to xia and siridhar. See MultiLevelMenus.
The "phplayers not available" message generally appears because it isn't turned on, on the Admin Features page. (I get the message on my Windows XP laptop install of Apache/Tiki even with phplayers turned on, but I think that's an unusual case.
