It's the same for Windows browsers. This quirkiness is intended behavior, with the side columns meant to jump into full view when the mouse hovers over them. In Mac browsers, can you see the full side columns when the mouse is over them?

Sure, using FTP or some other file manager. If you remove a CSS file, the theme of that name will no longer appear in your site's list of available themes. There's no need to keep all the themes there if you don't want to use them. You could also delete the theme's image folder (in the styles directory), if any, and its templates folder (in /templates/styles).
