One way is to use the Site Identity feature (in Tiki 1.9+ — not sure exactly when this feature was introduced). I don't use this feature myself and am not too sure of the details, but it can be configured to let you put a logo at the top of the page.
Otherwise, you can edit the templates/tiki-top_bar.tpl file (or templates/styles/(your_site's_default_theme)/tiki-top_bar.tpl). By default this file just displays the "This is Tiki 1.9.1..." and calendar link line, but you can add HTML tags to put a link to a logo img, or add other things at the top of the page. This will display on all Tiki pages that have the topbar turned on (it's on by default).
