I've heard other people talking about using Categories to set viewing permissions for categorized objects, but I'm not sure if it can be done yet. I tried a test back about the time 1.9.0 was released and that method didn't work in all cases, but it did in some. Don't know if things have progressed since then.
As far as wiki pages are concerned, if you use structures, you can set perms for a whole structure at once.
Beyond that, the safest way is probably to set perms explicitly for each object.
