I'm not sure exactly what text you mean. But the code that creates the top of the page is entered as "custom code" in the "content" box on tiki-admin.php?page=siteid. The code on TWOSiteIdentityCustomCode includes both the layout tags, etc. and the visible text that shows at the page top here. You'll have to look through that code and find the text that needs to be changed for your site.
