You can change the theme of the site on the Admin General page (tiki-admin.php?page=general). If the included themes don't offer what you want, you could visit themes.tw.o where (several, so far) new themes can be downloaded.
You can modify an existing theme, mainly by editing its stylesheet file, where details such as font family and size, graphic backgrounds, and so on are specified.
Columns can be turned off across the site or for specific site sections, on the Admin Features page.
Tiki really has a lot of flexibility in terms of look and feel.
