How the sites fit your screen (and other peoples') depends on what theme you're using, for one thing. But most if not all of Tiki's themes are liquid in the sense that the width isn't specified. If the content widths (side columns usually have a width set) plus center column width (which depends on what is in the center at the time, such as images or data tables) is less the the screen width, then the page will expand to fill the width. If it is more, than you'll get a horizontal scroll bar, just like with any other web page that is wider than the screen.
What theme(s) are you using, and what is the page showing when it is too wide to fit?
(There is a problem with forums in some new themes such as The News, in Tiki 2.*, that causes the page to be too wide. This will be fixed in the next major release.)
