The best way might be to use the "Pretty Tracker" feature. See http://doc.tikiwiki.org/tiki-index.php?page=Pretty+Tracker. I'm involved in getting a site going that uses trackers to record information that is displayed in wiki pages (http://reaxmusic.com). The documentation on this process may not be completely up to date yet (it usually lags behind Tiki's code development by quite a ways, unfortunately).
About the themes, I assume you have seen the handful of other themes that are also available at http://themes.tikiwiki.org.
Can you give some examples of Joomla or other themes (GPL or CCA licensed, etc.) that you consider "more professional" and that could be adapted for Tiki. I do this as time permits and am always interested in what people are looking for.
