1. How can I organise multilingual categories? You know, for link-directories, image galleries, forums, ....

Categories aren't multiliginal per-se. You could create a separate category for each language, then categorize the content, or simply create a separate gallery, forum, etc. for each language.

2. I'm not able to activate the searchbox for non-logged-in users. I was at the modules and activated everything for all user-groups (anonymous, registered, admin), but it doesn't appear.

Did you give the Anonymous group permission to use the search feature? Please see the docs for details.

Does anyone have some general advice, how I can/should organise multilinguality over several functions (wiki, forums, articles, directories, ...). I had a look at the docs, but what I found was, that for multilinguality you need some code-changing. Do I have to change code to get the languages working the way I would like?

Tiki's multilingual functionality does not require any code-changing, it works out-of-the-box. Can you give more detail of exactly what you're trying to accomplish? The *.tiki.org sites are all multilingual. Other good examples include http://wiki-translation.com and my own Tiki for Dummies Smarties.
