Problem changing latin1 to utf8

Hi
I am going to install the latest tiki version and used the built-in utility to check my apache and mysql installation.
Major issue was the use of latin instead of utf8 so I modified my.cnf but even after having used google for hours I caannott get rid of 4 settings which are still latin:
character_set_client, client_set_connection, character_set_results and collation_connection which is shown as latin_swedish_ci
I also set DefaultCharacter in Apache but that did not change anything (and yes I restarted apache and mysql after the updates)
Seems the settings in my.cnf have changed as a lot of the "hints" found ib google did no longer work: mysql did not restart when adding the setings suggested to change mysql to utf8
Anybody having a solution?

Solved:

Found a comment from Cheburaev on dev.mysql.com from 2009 where he suggests to add skip-character-set-client-handshake
That did it - my Tiki checl output is "clean"
