Use the Show Status option to configure if the status drop list is shown. Note that (I believe) it is always shown for the Admin.

I think someone is working on a tracker module to do this. In the meantime, you can simply create a link to the tracker ID, such as:
Copy to clipboard
[tiki-view_tracker.php?trackerId=XX]
Where XX = the ID of the tracker to link to.
