I have encountered this before, it has been around since before 3.1. Articles appear to do 2 wiki parsing passes when saved, but only 1 parsing pass on preview. You could get around this by using ~094~ (see wiki-syntax for special characters).
$x= y~094~2+z~094~2$ should work in articles for you, both in preview and after saving.
