How to restrict the list of categories shown in Profiles Admin Panel?

For instance, when testing a new tiki 11.x installation, and going to
profiles admin panel, the list of categories (renamed to "Profile
Types", because they refer to tiki versions and profiles types) is very
long listing old & deprecated tiki versions such as 3.x, 4.x, 5.x, etc.
I wanted to move a few from there, and I created the new category "Tiki
version Deprecated" to move at least 4.x and 5.x there (so that they
are not in the list of the configuration profiles admin panel). But they
are still listed (after clearing the local tiki caches and profiles.t.o
caches).
What is the best way to proceed to remove those old tiki versions (shall
we start with 4.x and 5.x at least? if not 3.x former LTS, 7.x and 8.x
also?)
