I would like to ask you a suggestion.

I am trying to use tiki to publish in my intranet a lot of documents.
Eg:
the Quality Management system docs, that is manuals, procedures, instructions, module templates, etc
They should be grouped either by doc type (man, proc, instr, mod), and then by Process ID as sub level;
or by Process ID, and then by doc type.

Which could be the best use of tiki features? and which one allows better categorization and "tree-ing"?
File gallery or Directory? ...

If you use a proper categorization scheme it doesn't matter whether you use the Galleries or Directory. Probably the Directory offers more direct organizational features as it allows sub-levels. But the real powers lies in adding one of more categories every time you add an object.
