You click the "Remove" link on the page (or the delete icon in the list of wiki pages).

Well, I guess you mean the links work in that they are still links. The linked-to page is gone, though, so they show with the question mark, right? That's how it works, as far as I know. Tiki will update links in pages when a page name is changed, but I guess for removed pages it's up to the site admin to deal with the old links. You can use the WANTEDPAGES (or something like that) plugin in a page to find all links-without-pages.

Yeah, I don't think there is such a thing, but the plugin is handy for finding the links.
